Oreo Truffles

Oreo.Cream.Cheese.Truffles. Need I say more? I've been on a sugar kick as of late and these bad boys are chocolate creamy heavenly goodness.

1 package Oreos
1 package cream cheese, room temp
8oz baking chocolate
colored sprinkles (optional)

Line a long container or baking dish with wax paper and set aside. Place package of cream cheese into a large mixing bowl. Next, crush entire package of Oreos. There are a bunch of different ways to do this so feel free to experiment and find what works best for you. One way I found worked really well is to place them in a large ziploc bag (about a dozen at a time) and roll them over with a rolling pin. The ziploc bag helps keep all the mess inside and you can just pour the crumbs in the mixing bowl. Now prepare to get your hands dirty! Once all the cookies are crushed, mix the cream cheese and crumbs together. Once combined, you'll want to roll them into quarter sized balls. Place on your wax paper lined dish and freeze for about an hour. This helps them solidify. Heat up 8oz of baking chocolate about 1.5 - 2 minutes and stir until all chocolate is melted. Pull truffle balls out of the freezer and roll in the chocolate. I found using toothpicks helped a lot in this process. Immediately place on wax paper or into mini baking cups. Add a pinch of sprinkles on top. Place in fridge or freezer until ready to serve. TaDa!
